Peach Enchiladas

When we went to the farm last week to pick strawberries, I took home some recipe cards. One of the recipes was for peach enchiladas. It sounded kinda strange to me, but one of the other moms tried it while we were there and said it was really good.


I tried it this weekend and it was awesome. It tasted kinda like a peach cobbler, only with more breading, and the breading is my favorite part. We ate half of it when I first made it. Later we had the rest of it with vanilla ice cream. I think it might have been even better with the ice cream. Yummy! This looks delish. I don't normally eat cooked fruit (I know, I'm weird, haha) but I DO like cobblers. The breading is my favorite part too.

This sounds lovely - I make a peach/blueberry crisp - everyone thought i was nuts, and now the kids beg for it several times a week. I'll have to try this one shortly - we love peaches.

I make th is same recipe with apple slices. You just cut an aple in half, then cut each half in 4 pieces ( total of 8 per apple) , then lay a piece of apple on the roll triangle, sprinkle with cinnamon/sugar, roll up and proceed jus tlike your recipe. Yummy!
