Tonight I made zucchini casserole for supper. It's the first one of the season! My husband was sad all winter with no casserole. Lucky for him, we planted a whole lot, so I can freeze it for the winter. It's his favorite dish! Please excuse the picture, I forgot to take it before we started eating.
You can make this casserole with squash or zucchini. Usually I don't like it as much as my hubby does, but tonight I must have made it just right, cause it was awesome! If you would like the recipe you can get it from Victoria Hill Farm.

I love sqaush casserole, but I always make it with yellow squash. I had not thought about using zucchini. Brittney always calls it "sqaush catastrophe".
